To begin, prepare the ingredients: you’ll need two ears of corn with the kernels removed, two tablespoons of vegetable oil, 200 grams of canned black beans that have been drained and rinsed, half a teaspoon of cumin seeds lightly crushed, sea salt, freshly ground black pepper, two limes, half a bunch of fresh coriander finely chopped, two jalapeños or green chilies deseeded and finely chopped, 200 grams of tortilla chips, 75 grams of grated mozzarella, 100 grams of grated mature cheddar, and sour cream for serving.

Start by heating a large frying pan over high heat. Add the corn kernels and cook them for five to ten minutes, stirring occasionally until they achieve a deep char. Transfer them to a large bowl. In the same pan, add the vegetable oil, followed by the black beans and crushed cumin seeds. Season with salt and pepper, and cook over high heat for around five minutes, stirring occasionally until the beans become slightly crisp and start to pop.

Combine the cooked beans with the charred corn, then finely grate the zest of one lime over the mixture, followed by the juice of one and a half limes. Mix in most of the chopped coriander and jalapeños, tossing everything together. Adjust the seasoning with additional lime juice, salt, or pepper if necessary. Meanwhile, preheat the grill to high, spread the tortilla chips evenly on a baking tray, and sprinkle both mozzarella and cheddar over them.

Place the tray under the grill for a few minutes until the cheese is melted and bubbly, keeping a close watch to prevent burning. Once ready, transfer the hot nachos to a serving platter, spoon the charred corn and black bean mixture over the cheesy chips, and finish with small dollops of sour cream. Garnish with the remaining coriander and chopped jalapeños before serving immediately. For an added touch of freshness, consider incorporating diced ripe tomatoes or a side of guacamole. Feel free to enhance the beans’ flavor by adding smoked paprika, crushed coriander seeds, or your preferred spices.
